Ennai Kathirikai is another complex revelation from @aachys2017. A spicy eggplant dish that not only has a complex masala paste with a myriad of spices, coconut and two varieties of dal (urad and chana dal), but the slightly tangy addition of tamarind. The fried eggplant are simmered with this toasted masala and tamarind along with curry leaves, red chillis and more spices until the eggplant is soft and the sauce becomes a thick, fiery and transcendentally complex gravy. The Tamil Nadu region of south India are experts in such gravy-based curries and this dish is the most prime example. They knew centuries before Western science that combining eggplant and lentils are incredibly healthy. The combination is hearty, flavourful and a soothing comfort. And of course I couldn’t resist an order of their Ulunthu Vada (savoury lentil doughnuts)! A treat with its own creative complexity! With their bright coconut chutney, it’s taken to delightful levels!! Thank you Chettinad Aachy’s for your artistic skill with food!
