And this is what the Toby Tin Society really looks like. Comprised of Paul, Manuel and me originally, with creative support from Paul’s beaming beauty Katherine. Our first venture Peg Leg has since spawned a new company to develop the hotel space above our beloved bar; made up only of Peg Leg regulars—adding Alex and Johnny to our crew of jolly Pyrmont Pirates. For this reason Alex, struck with a bolt of inspo proposed we call this company Pegulars Pty Ltd, in honour of our common connection. .
The very existence of this business entity is testimony to the faith and love shared by our guests, the unique family of likeminded individuals who congregate in our Public House and now even pool resources and efforts to creat a further community changing environment. .
There are many ways an entrepreneur can look at their projects and by all means profitability and sustainability are core, but to go beyond being a good business, with a view of being something great, one must seek something beyond common business metrics. It is ones community that keeps a venue alive for decades. Only by becoming a positive force in that community can a Bar hope to out live it’s competitors. It must be safe, welcoming, healthy, inclusive, fun and represent our civic culture with dignity and pride. Remembering always that we are responsible for the impression left with each person who visits our suburb (borough, neighbourhood) as well as setting the tempo for our residents though interacting daily with locals. In this way we make our city a better place to live and visit one guest at a time.

Two weeks ago, I shared a photo of an incredible strawberry-infused tequila negroni that I tried @brokenshaker Chicago for #negroniweek. Loved it SO MUCH that I tried to recreate it at home. There's no filter on this photo so you can see just how gorgeous the colour turned out!

Scaled up to 4 portions and infused with half a pint of sliced BC strawberries for 4 days.
