Happy Monday ✨ today I was looking back on older transformation photos & it really inspired me & reminded me how far I’ve come on my personal health journey. I know I haven’t posted as much fitness stuff the last year and that’s because I’ve been dealing with a lot of personal stuff and well, that wasn’t on the top of my priority list and honestly I wasn’t very motivated to write out a post and share it. Even though I wasn’t sharing, I’ve still been doing the same style workouts because it is a time I use to focus on just me and I look forward to it. Plus I always feel 100 times better after. .
Life isn’t always going to be happy and perfect. There are going to be hard times that just knock your ass down but you can’t give up. You have to keep trucking forward. I’m so thankful I had these workouts during this time of my life because it’s helped me keep somewhat sane. Which bring me to this 💗
I’m not as active with coaching like a used to be + don’t plan to be, but I realized that having that little fitness community really helped me during my harder moments & Id like to have that community available to others who are going through tough times so we can all support each other and have a place to come to for help. 🇵🇱 Polish dill cucumbers in brine aka "Ogorki Malosolne" accompanied my entire childhood and remind me of summer months spent with my grandma in the countryside. That's when baby cucumbers and overgrown dill are in season. I love dill cucumbers so much, these are different to pickled cucumbers, crunchier and they contain less salt in brine, therefore ferment faster (2-5 days) and have to be eaten within weeks (pickled cucumbers can be stored for ages). They do not require vinegar as preservative but use salted water solution to allow natural fermentation process
2½ kg baby cucumbers (garden cucumbers)
3½ litres of boiled water
about 5 tbs sea salt
dill (preferably flowering if you can get it)
pieces of horseradish root
horseradish leaves (optional and blackcurrant, grape, cherry or oak leaves can be used as well)
5 x 1l jars
1. Start by washing and soaking cucumbers in water for couple of hours.
2. In meantime dissolve salt in boiled water, leave aside to cool down.
3. Cover bottom of the jars with some leaves and dill stems.
4. Layer cumbers and seasonings trying to arrange them in jars as tight as possible to prevent them from floating once water is added.
5. Pour over cooled down salted water.
6. Cover jars with plates and place on some bigger plates or trays as the cucumbers will start fermenting and bubbling spilling some of the brine outside of the jars.
7. Let the cucumbers to ferment for at least 2-5 days.
8. When cucumber reach desired saltiness and sourness (constant tasting is required) move the jar to the fridge to slow down the process.
9. Enjoy as a side dish or sliced on sandwiches, in salads or burgers.

As much as I absolutely LOVE my job, Mondays have been tough recently. I require copious amounts of coffee and lots of willpower to get going ☕️
But the sense of accomplishment at the end of a busy day where I crossed a bunch of things off my to-do list is SO worth it ✅

Ice cream season is officially here. Well, let's be honest. I eat ice cream all year. But making ice cream? That's for Summer. It has been very, very, very warm these days, so much so that I haven't been wanting to bake. Anyone else the same way? 🔥
I whipped out the old ice cream maker and made this VEGAN peanut butter brownie ice cream. I used the ice cream recipe from @minimalistbaker as my base and added globs of peanut butter during the churning process. Then during the last few minutes, I added chunks of vegan brownies that I had made the other day. Pop these into ice cream cones from @joyconeco, and you've got yourself an awesome gluten-free and vegan treat.

#90DaysToAConsciousBody 20/90 Yesterday I got on the scale & I was disappointed to see that I had GAINED 1 pound.
I had a moment of frustration.
I reminded myself that this is part of the process.
This is the part where you may feel like GIVING UP. When in reality, it’s when you need to PUSH the most.
Weight-loss isn’t linear. Some days the scale will jump up instead of going down.
It’s totally normal. Our weight fluctuates between +5 or -5 pounds.
Don’t let the scale sabotage your progress.
OH! & btw, despite the 1 pound weight gain on the scale, I woke up feeling smaller😌🤟🏼

Vanille-Crepes: 👉🏼•75g Dinkelmehl (Typ 1050) •70ml Mandelmilch •70ml Sprudelwasser •gemahlene Vanille •2TL Kokosblütenzucker •1/2TL Zimt👉🏼vermischen 👉🏼10 min ruhen lassen 👉🏼 auf hoher Hitze kurz von beiden Seiten ausbacken.
(1) Mix: •75g spielt flour •70ml almond milk •70ml sparkling water •vanilla and cinnamon • 2tsp sweetener👉🏼mix everything 👉🏼Let the dough rest for 10 min. and fry your Crêpes on both sides.

For my clients who struggle with reducing their intake when wanting to lose weight, I really focus on where calories are coming from......A lot of my clients say they feel like they are eating more than ever whilst loosing weight with me.... simply down to calorie education. Surely a sandwich, an apple and popcorn is more satisfying than one sandwich?
Being smart with your calories can help you achieve your goal. Eating well doesn't have to mean eating less. It doesn't have to mean RESTRICTING. It can mean making smart choices🤓and making the most of your calories.
Food preparation can be a hassle but can help so much when working towards specific goals whether that be weight loss or gain. There are no added ingredients that you are unaware of and you have complete control of what goes into your meal. At the end of the day if you can't pronounce the ingredients on the packet, is it really good for us?
SUPERMARKET SANDWICH VS HOMEMADE ..both egg mayonnaise, both 2 slices of bread... so what's the difference?
How can 2 sandwiches have such a difference in calories and be so similar?
SHOP BOUGHT - sandwich contains 485 calories however it doesn't seem any bigger than the homemade option... the only difference will be the use of sauces and again.. invisible calories.
HOMEMADE - 324 cal 2 slice wholemeal bread, 1 egg, 50g egg whites, cress and extra light mayonnaise.
This is simply to remind you how preparing your own food can help you so much when working towards your goals... often shop bought foods have lots of extra unnecessary ingredients and calories in!

Savory breakfast bowl but switched out my usual egg for some bacon 😎 Pretty content with that decision 😉I had leftover bacon from making my stepdad breakfast yesterday so of course I wasn’t going to let it go to waste 😜 Paired it with some of my weekly meal prep for filling Monday morning breakfast 🤗 I heated up the bacon and Brussels in my cast iron skillet 👌🏻 Best way to reheat food because it keeps it nice and crisp and there’s nothing I dislike more than soggy veggies 😷 It keeps me looking forward to my meals rather than being like ew great another morning of reheated veggies 🙃 I picked up some bacon and made sure it was grass fed 🥓🙌🏻 The reason behind this is making sure it’s not pumped full of hormones because I try to avoid that personally in my diet 🤷🏼♀️ And this is just whenever it’s possible- I definitely don’t always eat grass fed meat because it’s impossible to do where I live while eating out and I’d rather eat out with family/friends 👌🏻 But like I said just my personal experience- find what works for you and makes you happiest!!
