🔥 Middle Eastern Shakshuka Dinner 🔥
This one-skillet wonder is perfect for busy weeknights when you need to get dinner on the table fast. It’s a comforting dish that makes a hearty breakfast or delicious brunch, too.
➡️ 3 tbsp (45 mL) olive oil.
➡️ 1 small onion, chopped.
➡️ 1 red pepper, chopped.
➡️ 4 cloves garlic, minced.
➡️ 3 tbsp (45 mL) tomato paste.
➡️ 2 tsp (10 mL) ground cumin.
➡️ 1 tsp (5 mL) ground coriander.
➡️ 1 tsp (5 mL) smoked paprika.
➡️ 1/2 tsp (2.5 mL) salt.
➡️ 1/4 tsp (1.25 mL) cinnamon.
➡️ 1/4 tsp (1.25 mL) hot pepper flakes.
➡️ 1/4 tsp (1.25 mL) freshly ground pepper.
➡️ 1 can diced tomatoes (28 oz/796 mL).
➡️ 8 eggs.
➡️ 1/4 cup (60 mL) finely crumbled feta cheese.
➡️ 2 tbsp (30 mL) chopped fresh parsley.
➡️ 4 Greek-style pitas (7 inch/18 cm), toasted.
✅ Step 1: Preheat oven to 400°F (200°C). In large ovenproof high-sided skillet, heat oil over medium heat; cook onion, pepper, garlic, tomato paste, cumin, coriander, smoked paprika, salt, cinnamon, hot pepper flakes and pepper, stirring occasionally, until vegetables start to soften and tomato paste is deep red and very fragrant, approximately 3 to 5 minutes.
✅ Step 2: Add diced tomatoes to skillet; cook, stirring occasionally, until thickened, approximately 10 minutes. Reduce heat to medium-low. Using a spoon, make 8 divots in the sauce mixture; crack egg into each divot.
✅ Step 3: Baste each egg with a little of the tomato sauce; transfer to oven. Bake until eggs are soft-cooked or cooked to desired doneness, approximately 8 to 10 minutes. Garnish with feta and parsley. Serve with pita bread.

I am a chicken burger person, when I was a gluten-eater and went to any fast food chain I would always get the chicken sandwich/burger & whenever I get a burger 9 times out of 10, it’ll be chicken.
When I go to a restaurant and see breaded chicken burgers it makes me slightly sad to know I can’t have it. But since trying last months @honestburgers special, it lit a fire in my tummy for more. And whilst lingering in the free from aisle the other day (I spend far too much time in supermarkets 🙈), I spotted @mrscrimbles breadcrumbs. I can safely say this was a revolutionary moment because this beautiful fried chicken sandwich was AMAZING. And I’m not being dramatic!!! •
@promiseglutenfree sandwich roll, @mrscrimbles breadcrumb coated chicken breast, @sainsburys unsmoked streaky bacon, Gouda slices & @hellmannsuk mayo with shredded iceburg lettuce, tomato & pickles
Mushroom salad with lentils and caramelized onions, topped with crunchy pine nuts and briny capers – * 1 1/2 - 2 lbs medley of raw mushrooms
* Olive oil
* 2 big onions
* 1/2 tsp of black pepper
* 1/4 tsp of salt
* 1/4 cup dry black lentils
* 3/4 cups vegetable broth or water
* 1/4 cup pine nuts
* 1/4 cup capers
* a splash of truffle oil optional
* 2-3 tbs of chopped garlic chives for garnish
1. Clean, and cut mushrooms in small pieces. Saute in 2 tbs of olive oil with salt and pepper, until completely cooked (about two cups cooked mushrooms).
2. Chop the onions, and saute in the olive oil, on low heat, until they caramelize and turn golden brown (10-15 minutes). You should end up with 1 cup of cooked onions.
3. Boil the broth or water, add salt, and the dry lentils. Cook for about 20 minutes or until the lentils is fully cooked without being mushy. You should get 1 cup of cooked lentils.
4. Assemble the salad by mixing the cooked lentils, mushrooms, and onions. Adjust the salt, and add truffle oil if desired. Mix in the capers and pine nuts, and serve over a bed of arugula, sprinkled with lots of garlic / onion chives.
