You’ve probably seen this purple-blue flower growing all along our roadsides and sidewalks (we use it in our herbal coffee!) Chicory root has been the leading coffee substitute for decades, not just because it mimics the taste, but it also provides a little boost of energy to get through the day. Chicory contains a compound called INULIN which is a prebiotic, promoting healthy bacteria in the gut & colon. It also helps our bodies to better absorb nutrients from other foods. The roots of chicory aren’t the only available part of the plant: leaves can be tossed in salads and smoothies as a wonderful tonic. 🌿🌿🌿🌿🌿🌿🌿🌿🌿
It’s pretty amazing that plants like chicory (dandelion too) come up everywhere in such abundance, almost begging us to notice them. These are the medicines we need most...and the plants are doing a great job at making it available to us. When much of the food we see comes from a box or wrapper, our bodies need that extra ability to absorb the good nutrients from the little amount of true foods we do have access to. Same for dandelion: a powerful detoxifier (also in our herbal coffee!). When a nightly alcoholic beverage is normal or a few cookies at lunch is a regular thing, our bodies need cleansing. And dandelion is here to give us that gentle detox by cleansing the organs of our bodies. It’s everywhere!

The Dandelion is a flowering plant that belongs to the family Asteraceae. There are around 30 species of dandelion that can be found all over the world. Dandelions inhabits different habitats that provide enough sunlight: meadows, grasslands, edges of the forests, gardens and lawns. In most parts of the world, the dandelion is known as a weed. Belgium is one of the rare countries that cultivates and exploits dandelions in large quantities. Despite its bad reputation, the dandelion has numerous properties that are beneficial for humans. It can be used as food, as an ingredient of alcoholic and non-alcoholic beverages, in the production of tires, or as medicine.
The name dandelion originates from the French words "dent de lion" which mean lion's tooth. This name is given because of the deeply toothed leaves of dandelions.
Dandelion is a rich source of vitamins A, C and K. It also contains high level of iron, calcium and potassium. Dandelion is used mainly in Asian cuisine, often as an ingredient of salads and sandwiches.
Dandelion can be used in the production of wine and root beer. Root of dandelions can be used as a substitute for coffee.
Dandelion is used in folk medicine to treat infections and liver disorders. Tea made of dandelion acts as diuretic (facilitates excretion of urine). The milky liquid produced in the stem contains latex (substance that is similar to rubber). Scientists created a new species of dandelion which produces high quality latex in greater amount.
