I made Earl Grey short bread cookies. They are delicious. I wish I added more earl grey but it is still a great bite sized delight. Here is the recipe if you're interested. The Ingredients are 1/2 unsalted butter (slightly cooler than room temp),1/3 cup sugar, 1/2 tsp salt, 1tsp vanilla extract, half the contents of one earl grey tea bag (next time I'll add the whole thing but whatever is your preferred choice), 1 cup all-purpose flour, 1/2 cup chocolate chips, and 2 tsp vegetable or coconut oil. To make, add butter and sugar to bowl. Cream the butter and sugar together on medium speed with mixer until mix is pale in color and slightly fluffy. Add vanilla, salt, and tea. Mix until all incorporated. Add flour and mix in low until no streaks of flour remain. Dump contents onto clean work surface and roll about 3 to 3.5 inch diameter. Once its starting to form, put log on plastic wrap and roll wrapped log until a smooth cylinder. Place in fridge 1-2 hours. After chilled, preheat oven to 325 and remove from fridge and unwrap. Line cookie sheet with parchment paper. Cut cylinder into 18 slices. Place on try and bake 22-24 min or until edges are slightly golden brown. Cool for 5 min and then completely cool before adding chocolate. Combine chocolate and oil in microwave safe bowl. Microwave 30 sec and stir. Microwave in 15 sec bursts stirring each time until smooth. Spoon chocolate over cooled cookies and allow chocolate to cool and harden. I was impatient and put them in the fridge. That worked too.👍
