Animando a tarde de domingo com uma torre de panquecas esquisita e colorida!!! A receita é a clássica Banana Pancakes adaptada para a versão vegana. Para fazer a massa das panquecas eu usei 1 banana amassada, 1 colher de farelo de aveia e o ovo eu substitui por 1 colher de chá de psyllium hidratado em 1/2 xícara de leite de coco! Para colorir eu usei “Pink Pitaya Powder” e “Butterfly Pea Powder” (é uma flor de cor azul) ✨💙🍒🍓🥞
BREAKFAST FOR LUNCH 🍽The boss needed a Guinea pig to trial the ‘ultimate vegan breakfast’ before adding to the menu, and it was AMAZING🙌🏽Linda McCartney sausages, sourdough toast, sweet potato bubble and squeak, beans, avocado, tomatoes, mushrooms and rocket 😩💖

A quick lunch thrown together from stuff I prepped yesterday:
GREEN: @organicgirl protein greens + chopped lacinato kale
PROTEIN: Pulled rotisserie chicken + lemon-oregano-marinated garbanzo beans
MORE VEGETABLE: a store bought @traderjoes cauliflower tabbouleh (awesome whole food option!), @wildbrine beet and cabbage salad, @bloomsburyfarm sprouts.
HEALTHY FAT + FLAVOR: whisk of 1Tbsp olive oil + 1 tsp lemon juice + oregano, flaky sea salt
Everything you see was ready for assembly. This is even less home prepped than i usually do, making it proof that even those of you who don’t love cooking can still hang with this bowl life.
And yeah, those are totally a few dolmas on the side. Are you surprised I love a thing that’s rice wrapped in greens.

Happy Sunday friends! I don’t know about you guys but this weekend has flown by! Last night I attended my first work event and it was so much fun! I’ve been so blessed to work somewhere with the most amazing people and who throw some pretty fabulous parties! I had some drinks, ate some good food and enjoyed every second of it! Life is all about balance peeps!! It’s too short not to live every second to the fullest! ❤️
