Healthy meals don't have to be complicated, and breakfast for dinner or any meal is completely acceptable in my books!! Scrambled egg hash for 2 - 2 red potatoes or sweet potatoes cut into cubes
- cook over medium heat until almost fork tender
- remove from heat and place into a separate bowl
- chop and cook bacon 4 slices, 1/2 orange pepper, 1/4 white onion over medium heat until onions are translucent and bacon is cooked
- add potatoes back in and stir in 2 cups spinach (you can use frozen here to)
- cook for 5 minutes or until spinach is wilted
- scramble in 4 eggs
You can season this with anything you'd like, salt, pepper, garlic, ginger, oregano are all some of my favorites

When I went to Bali last year I had the chance to attend a traditional cooking workshop, where along with other typical Balinese dishes, we learned how to cook the most delicious Black Rice Pudding. We shredded the fresh coconut meat and squeeze it using our hands to get the creamiest milk you can imagine. Then we steamed the rice to perfection and sweetened it with homemade (yes, homemade!) coconut sugar. We finally combined the rice with the coconut milk and topped it with the sweetest mango I have ever tried (picked from a mango tree the Chef had at his farm) As you can imagine, there is no way to make rice pudding at home as tasty and special as that one, but I still like to cook it when I have rice leftovers. This is one of my versions. I got a bit crazy with toppings and added raspberries, figs, passion fruit, and finger limes for that extra acidic and crunchy texture. It can’t be compared with Balinese pudding, but it still was a good one! What you think? 😉 Happy Wednesday! 😘

i am peassss to share a new veggie side dish that’s packed with protein, creamy and oh so dreamy.
to whip up these [ baked peas with a creamy yogurt sauce ] simply toss english peas with @siggisdairy plain 0% yogurt, olive oil, @savoryspiceshop parmesan pesto seasoning and pink sea salt. then spread across a baking dish [ first spray the dish with @chosenfoods avocado oil spray ] and bake at 500 degrees for 15 minutes, just until the top of the peas start to brown. served here with brown rice and shrimp sautéed with @chosenfoods avocado oil and @justspices seafood seasoning blend. this is going to be on repeat ferrr sure.
