Healthy Baked Chicken Nuggets 🍗 .
1kg chicken breast cut into bite size pieces .
3 eggs (beaten) .
3 cups of breadcrumbs .
1 tbsp onion powder .
1 tbsp chopped rosemary. .
Preheat oven to 180°c. .
In one bowl beat eggs and set aside .
In another bowl, mix breadcrumbs, rosemary and onion powder. (Add a pinch of salt if Bubs is older than 2) .
Place all chicken pieces into the egg bowl and coat thoroughly. .
Take off excess egg so it’s not dripping and coat in the breadcrumbs then place on a baking tray. .
Repeat until all chicken is coated and on the tray. .
Bake in oven for 20 mins making sure all pieces are cooked through. .
Freeze for easy lunchbox snacks or a quick healthy lunch option.

It has been a productive long weekend here trying to restock our very empty freezers! We made our house tomato sauce with hidden veggies for flavour and extra nutrition which also ended up as dinner tonight. Next up was some Butter Chicken Sauce with hidden veggies and lentils for extra nutrition and I tried a new recipe from the cookbook Family Meals by #ChefMichaelSmith for Chia Veggie Burgers for dinner tomorrow as well as the Cinnamon Oatmeal cookies. While I was chopping up veg I also sautéed some veggies to add to a turkey meatloaf planned for later this week. We have all been craving our homemade granola bars and we needed some school snacks on hand so made a nut-free version as well. I wanted to make some zucchini muffins and zucchini breakfast cookies but surprise I was too tired after this and the boys needed some momma love. Then I fell asleep with our oldest cuddling with him before bed.I might try to get the muffins done in the morning... time will tell! Grilled season grilled chicken and mixed rosted veggies. .
Trying to increase protein and veggie intake. Need the extra protein for muscles building 💪. The gym is the easy part, it's nutrition that is the hard part. 🙄. .

Meal planning is such a great tool for keeping within your budget. It helps with anxiety levels too, not constant worrying about tonight's dinner! Instead, I sat at my kitchen table and worried about seven meals plus a dessert for maybe 10 minutes! 🤣 Seriously though, it's one less worry for me this week.
It warms my heart to have my 4-year-old ask for brussel sprouts 3 extra times at dinner!
Not because of the vegetable, but because he asked for more vegetables. It's ok if he didn't like them (2 of the other boys don't really enjoy them and I never really ate it until 3 years ago), but I provided him the opportunity to try it.
Fast food world is easy and can make life a lot less complicated, along with only serving the food you know your kids WILL eat. With our busy life, I 100% get it. But setting the example of caring about what we eat, trying new things and just sharing how fitness and nutrition is important let's them be safe to explore in it. Treats, eating out, not being "on point" are all fine, but teaching my kids how to live life in a healthy manner is good, too. 😎

They are a perfect sweet treat without the processed sugars and are nutrient dense to fill you up healthy fats, fiber and protein to keep you going until dinnertime. Chocolate Chip Protein Bites:
1 cup old fashioned oats
1/2 cup almond butter
1/3 cup local honey
1/4 cup Dark chocolate chip
2 TB chia seeds
Blend all together in food processor until dough like consistency is formed. Roll on to golf ball size balls. Store in airtight container in the fridge for up to a week (if they last that long).

This is a favorite recipe of ours that is straight from the Balanced Habits KickStart and LIFE nutrition programs we offer. We have used it many times for our family and friends, and it never disappoints! 💪
What's great about it is it's quick, easy to put together, easy to personalize and feeds the whole bunch! (We even have leftovers). It's such a hearty pizza we are stuffed after a couple pieces!! 🙊
Start to finish this takes 25 min. Less than it takes to order and have a pizza delivered! ⏰
Quick ingredient list:
Pre done crust
2 % mozz cheese
1/2lb each 93% and 99% ground turkey
(Additional toppings to taste)
Seasonings pictured in the turkey/kale pan
1. In a pan Cook turkey, Kale and seasonings.
2. Lay sauce on crust, then add cooked turkey/kale mixture
3. Top with red peppers and any veggie toppings
4. 400 degrees for 10-12 min
Servings: will vary for each individuals needs, however for general purposes 👧woman 2-3 slices, 👦men 3-4 slices

I had a very busy day today. To have something very quick for dinner, I cooked the chicken and French beans stir-fry and steamed rice. It took only 15 minutes to cook. Super quick and very delicious 😋😄 would you like to try it? 1, cook some rice in a rice cooker; 2, heat up a wok with some veg oil, while waiting, slice a piece of chicken breast to small cubes; 3, put sliced chicken breast to the wok to cook, at the same time, wash and slice some French beans; when chicken pieces are cooked, put then in a dish to use later. 4, heat up a wok again with a little veg oil, and then put sliced French beans in. Add some soy sauce to give flavour, and then add some water to cook the beans for 2-3 minutes. When the beans are soft, add cooked chicken back in. Monday: Pulled chicken pittas with coleslaw 😋 and 👍🏼👍🏼 up from the kids (well 👍🏼 for the chicken and de-constructed coleslaw! 🙈) I preempted that they would just want cabbage and carrot🥕 plain with iceberg lettuce so that’s what they had with lots of the pulled chicken and Alfie had some grated cheese in his too! 🤷🏻♀️ pulled chicken inspired by @becsintheburbs who had a very similar meal last week! Thanks Becs!
I personally thought the coleslaw was 👌🏼 😂...mayo, creme fraiche, Dijon mustard and then well seasoned...mix together with some finely grated carrot and cabbage and voila!
Now onto the chicken! 🐓 This was a success for all and it’s so easy! Maisie said she LOVED the chicken! • It was simply chicken thighs with Greek seasoning, dried oregano, garlic powder and black pepper comes on low in my slow cooker for 4 hours with 1/2 cup chicken stock. 🌟I actually used about a cup but there was too much liquid so I had to simmer it for a few minutes to reduce the liquid at the end but 1/2 cup should be perfect. • I used 2 x 640g packs of chicken thighs...then after 4 hours simply pull apart with a fork...it was sooooo soft! Yum! It’s also quite good to use as a base for other meals - I’ve got loads left for a freezer stash so might add some bbq sauce or some fajita seasoning for tacos next time....endless possibilities!!! 🤷🏻♀️😂
But for tonight we simply loaded up our pittas! ~

I’ve got a challenge for you parents of #pickyeaters - We're going to 💥CELEBRATE💥 them! There’s so much talk about picky eating. Understandably! It can be a soul sucking experience. It's exhausting, because you have to confront it so many times a day and it hits at the core because it's about sustaining your child's health and well-being. So I GET IT ➡️ the talk is important. And we will continue to talk about it, share tips, develop strategies, and sometimes just vent and laugh about it. Because OMG JUST EAT ALREADY, KID.
But let's also have some moments where we shift our perspective. Where we focus on what our kids do right. What they are willing to eat. What's going to be okay. How it's all going to work out fine (because it really will).
This cutie right here? He was a super selective eater for a looooong time and now he's my veggie chomping monster. He may not be as adventurous as his older brother, and he certainly has a serious sweet tooth that we battle at snack time, but he eats way more veggies in the long run and he's catching up on his willingness to try new foods. He's just a slower mover. But the kid's alright.

Who says eating to fuel your body, instead of comforting yourself with food, has to be boring??? I added some black bean and corn salsa on top of this salad, and it became a FIESTA!!! I am learning so much about myself, my body, and my mindset on how I look at food!

So we had our first @hellofreshuk dinner tonight and my gahhhsssshhhhhh it was so good and so blooming easy!
Sophia loved it too and it was great practising her reading as she read out the card to me and it was fab!
I honestly cannot wait to cook tomorrow although it will be for lunch as I am Obvs off to meet my fave author in the world tomorrow..have I mentioned that? 😂 soooooooo exciteeeeedddddd!! Obvs also looking forward to meeting the queen that it @motherhood_rx !

What are your tips and tricks for grocery shopping?
My Storecupboard Tomato & Basil Pasta Sauce 🍅🌱 I make this pasta a lot because it’s cheap to make, you’ll already have most of the ingredients in your cupboard and it’s really quick to make. So if you’ve had a long tiring day and need to feed everyone fast this is definitely worth trying!
Packet of spaghetti (I use wholemeal, the kids don’t know the difference when it’s cooked 😁 And it’s better for them!)
1 onion chopped
2 crushed cloves of garlic
2 tins of chopped tomatoes
Pinch of sugar
Salt & pepper
Handful of chopped basil
Heat some olive oil in a saucepan , add the onion & garlic cook on a low heat for 5-6 minutes, stirring all the time so it doesn’t burn. Tip in the tinned tomatoes, add a pinch of sugar to sweeten slightly as tomatoes can have a sharp taste especially tinned tomatoes. Season with salt & pepper Let simmer for 20-25 minutes, stirring every now & then. Meanwhile cook your pasta following the instructions on the packet. When the sauce has slightly reduced & thickened take off the heat and blend with a hand held blender. Roughly chop the basil and add to the sauce. Then tip in the cooked pasta and mix it all together. Serve with lots of grated Parmesan and crusty bread to mop up the sauce. You can play around with the ingredients too adding what you like, tuna & capers are delicious in this sauce 😋 #homecooking#homecooked#cookfromscratch#familymeals#ciarascooking
