ITS FINALLY MELON SEASON!! 👨🌾 Watermelon and Cantaloupe are my two favorites and a couple of the best snack foods. How do you pick out a good melon? I’d love to hear your tricks and I’ll share mine as well 😎😎
Melons are so great because they are pretty much just water disguised as food. Because of this, you get lots of volume for little calories. Both these bowls were around 500g worth of fruit and right around 200 calories. I am a boredom eater and during April-June I find myself on the couch watching the NBA playoffs often. It’s almost like I have some psychological need to eat while I sit there because if I don’t have food, I won’t watch the games. Melons are great because they provide so much volume for few calories and I can spread if out over an hour or so 👍👍
Here’s how I pick my cantaloupe. They have been really good this year so I definitely recommend buying one next time you’re at the store. .
🔸Find one that is heavy for its size 🔸Make sure there are no major blemishes. 🔸Press on the butt and if it is soft, it’s ripe. If it’s firm, not yet. The butt is the opposite side of the stem. I don’t know what the actual name is but it seems like a butt to me. .

🔹Find one that has a large sun spot. 🔹Find one with those brown marks on it that feel and look kind of like tree bark. This is where insects try and get to the fruit because they know it’s sweet. ➖

@ikoyi_london have recently introduced a pre-theatre menu, which means I can finally afford to eat there! It serves spicy West-African food, so if you’re the kind of person who goes to Nando’s and orders lemon and herb, maybe skip this place. :p To start, I had these beautiful thin slices of plaintain, fried perfectly golden brown, and coated in luridly pink raspberry salt. Absolutely perfect with a lick of their fiery scotch bonnet emulsion - in fact, it was so good I just ate it all on its own! 🍚 See what I next ate tomorrow.

One of my last graded assignments and the only one that did comeback graded at 💯%. 😏
The reason? I did not slice it to show the texture. 🤦🏻♀️
Was it written in the assignment as a requirement, yes. Why did I not do it? 🤷🏻♀️ I totally spaced it. It was an oversight on my part and I was totally bummed. It broke my streak of getting 100% on every assignment and it had to happen on my second to the last assignment, of course. 🙄
BUT, I did complete the course with a solid 98%! I left with some very useful new techniques that will help me create some tasty Vegan treats! 🎂🍰🥧🍦🍪🍩😋
And I had so much fun baking lots of amazing treats.

Greek Orzo Stuffed Red Peppers with Lemony Basil Tomatoes --> couldn't love these stuffed peppers more. They are SO GOOD. Slow roasted red peppers stuffed with greek orzo, feta cheese, and topped with lemony basil tomatoes. Simple but perfect. Bonus? most of the ingredients can be found in the garden or at the farmers market. When Costco has some cheap fresh wild salmon you make salmon everyday! So look out for a lot of salmon posts lol! This salmon came out so crispy oh my! My breath got taken away when I flipped the salmon over! Also had to make some pesto pasta with @eatbanza pasta because sometimes you just want some pasta! Banza is by far my favorite pasta because it’s made with chickpeas and has my protein so I am all about it! Hope you guys have a great Sunday night! •
