Dinner meat medley of roast lamb ribs, chicken liver fried with fresh, uncured pastured bacon, and topped with bone marrow, straight from the bone that I roasted with the lamb. REAL. FOOD. 🥩 Oh, yes, and off course topped woth eggs - I ate 10. 🥚What about vitamins, minerals and micro-nutrients? Lamb is rich in B12, selenium, zinc, heme iron, DHA and EPA... Those omega 3 fatty acids you can't get in plants (except in certain algea... Do you really think we evolved to get it from algae?). Liver is a concentrated source of vitamin A, B vitamins, folate, and contains magnesium, potassium, copper, zinc, iron, even calcium. And egg yolks are incredibly nutrient dense... The list is too long.
Conventional wisdom holds that micronutrients like vitamins, minerals and trace elements have to be sourced from fruits and veggies. Something like liver surpasses any fruit and vegetable in most things except vitamin C. Vitamin C is present in FRESH meat, and vitamin C requirements are reduced in the ABSENCE of carbohydrate intake as carbohydrate metabolism increases the need for many of these nutrients. i rewatched my interview with romy @circlerlamb yesterday while i was finishing off edits for this friday's episode release, and i forgot how much i was laughing and snorting during our conversation. visiting romy at her home was such a joy, and learning experience with her 600-head flock (check out her feed to see their recent expansion work!). the interview is also interrupted constantly by a sneezing lamb (he sounds like a cross between a foghorn and a squeaky toy) and poppy the sheepdog. i can't wait for you to see it, and the new shawl i designed with romy's yarn! 🐑

Family reunion on the weekend just gone was exquisite. Not only did I get to see and speak to a large proportion of my 300+ person family (Catholic birth control if I've ever seen it) in Killarney, but also got to feast on some cracking tucker. The main event of the weekend featured a four course feast, of which the mango sorbet did not make the cut (not a sorbet man). Started with a black pudding and bacon salad. I love black and white pudding when back in Ireland so nice to have this spin on it. Main was roast lamb with potato Dauphines, veggies and the side that truly stole the show, by far the fucking best mash potato that I've ever tasted. Cheesy, creamy, fluffy, bliss (hence the picture of me cradling it as if it were a first born son). A selection of desserts followed including bannoffee pie, apple pie, ice cream and profiteroles. Breast of lamb is such a delicious and economical cut that people really should eat more! Slow roasted these babies for 5 hours then put them in a wrap with tzatziki, chimichurri, pecorino cheese, and some fresh tomatoes from @fortyhallfarm 👌
