Spam Seaweed Bites
3-5T Soy Sauce 2T Rice Vinegar 1T Brown Sugar 1t Crushed Red Pepper Flakes 1T Minced Garlic (Adjust to your preferences) Put above ingredients in pan on Medium heat, dissolve sugar. Let it simmer for a minute or so then add 1 Can Low Sodium Spam, diced. Cook for 5-7 minute or until meat is browned and glazed. While that's cooking, heat rice (I always keep minute brown rice on hand for quick meals). While that's cooking make a simple salad. Handful of greens torn into smaller pieces, 1 Medium Carrot sliced into ribbons, Same amount of cucumber sliced into ribbons. Make vinaigrette with 4T Rice Vinegar, 1-2T Ponzu, salt, pepper and oil (I used avocado for mild flavor, use what you got!) wisk well and lightly dress the salad (you'll probably have more than you need, but you can use it as a dipping sauce if you want too)
Assemble plate with rice, spam and salad. Serve with seaweed snacks!
