In January, I said out loud, "Universe! I will be doing more with my business & I will start bringing more of my food para todos!" As I have mentioned before I have been at this since March of 2016 but at a slow pace since I'm alone in this journey financially & as I have talked with other vegan businesses & vendors, many agree, it is challenging. I'm not sure if people truly truly realize how much work goes into having your own business & how costly it can get. But with that being said, I have faith it will work out. It has to. Slowly I have been getting recognition from 1st the article on LA Taco written by the amazing Lilibeth Garcia to then being featured on @SalviesWhoLunch to now a food guide by @ShopLatinx (Thank you for including me! 😊). I am humbled & honored truly to be on that list because I have not been as active & am not as established as others on the list. I honestly just want people to try my food & luckily quite a few of you have already tried my creations. Thank you to all who are supporting me in this journey of bringing you authentic Salvadoran vegan food. I am close to getting one of the things off my list with money I have saved along with the contributions so far to my GoFundMe. VEGAN CHIK'N WINGS! I traveled to Chicago for work and I found this amazing vegan stand @vegannowchicago in Chicago French Market. I had wings, collard greens, rice and steak that was ALL VEGAN! History was made. I have made it to the gym. My toe is feeling a TON better since last week aka I can finally wear close toed shoes!!
If you haven’t heard - two weeks ago I stubbed my toe but like stubbed to the point were I cried, it bruised all around, look like a sausage and I couldn’t walk normal for a while but I’m heallllllin🙌🏻

Being vegan can be isolating & sometimes people like to poke fun, but nonetheless I’m so much happier with this lifestyle I’ve chosen because it truly aligns with my values & morals of preventative health over the eventual need for pharmaceutical drugs/surgery, protecting our environment over trashing it, & extending compassion for all beings over turning a blind eye to animal cruelty. I’ll continue to stand firm in what I believe in, even if it means I rock the boat a little, go through awkward non-vegan-friendly situations, & cease to fit in with the crowd in general. I’ve always loved individuality & unconventionality anyway. I’d rather be my weird lil vegan self & risk some people not vibing with me than pretend I’m someone else for the sake of making others feel more comfortable in my presence.
Don’t get me wrong, there are times when I do feel a lil dejected because I feel like I’m not making enough of a difference to spread the vegan message & other times I wonder if people think it’s annoying that I even try to do so. Then I recenter & remember that it doesn’t matter if some people hate on it because I can’t & shouldn’t feel the need to please everyone. I remember that it is important, in fact necessary, that I use my voice to create awareness for veganism because something I say has the potential to finally click for those willing to listen with open minds & open hearts. And it already has! It truly makes me such a happy camper when people tell me they’ve transitioned/are transitioning to being vegan, are starting to eat more vegan meals & less meat, or simply trying out vegan food at restaurants! This has happened plenty of times & it always brightens my day!
I know that even if it’s a slow process to get the majority/all of the world to go vegan, there is without a doubt progress happening nonetheless. And after all, slow & steady wins the race. 😉🌱

The vegan community and movement can get so caught up in disproving the "myths" that we stop ourselves from growing and adding depth to our conversation. Things like the fact that undocumented immigrants are used by companies in slaughter houses, with the threat of deportation hanging over their heads is something we should be speaking about. The fact that these factory farms are typically located in poorer minority communities exposing those individuals to the runoff and waste created by meat consumption needs to be highlighted more often. Accessibility is largely overlooked with an attitude of "just do it, anybody can". -
With every other movement moving towards intersectionality, there is some resistance in the vegan one to keep it EXCLUSIVELY about the animals (and apparently muscles). I've been called a Marxist and told "intersectionality is a cancer" for even suggesting we should care about people, which is absurd. Sure we can say plants have protein and biceps can be built by being vegan, but like what else? We need depth, nuance, and intelligent discussion in addition to our seemingly surface level points. I’m a MASSIVE supporter of non scale victory’s and are actually my favourites as scales can be very deceiving and leave you feeling let down, so what I’m trying to say is don’t let the scales be your primary focus of your journey 😊
Remember to try and love yourself as you are now and don’t let the numbers on a scale define your happiness or your self worth, you are more than enough, mental health is much more important than numbers on a scale, take care of your mind and your body will follow.
The only reason to change is for yourself, never change for someone else.
Remember folks that setting yourself with smaller more attainable goals means you will less likely to fail and get discouraged, just take your time and enjoy your journey 😊
I’ve not done anything different, I’ve still been doing my IF (intermittent fasting 20 hours fasted 4 hours feasting) and I’ve also been doing my yoga (if you want a recommendation on where to start I can’t recommend “Yoga With Adriene” on YouTube enough) I’ve also started walking for 30 minutes a day, cycling and doing body weight exercises.

💪And you can defiantly build muscle on a plant based diet by using weights and/or body weight exercises.
💁♀️Ladies seem to always say "I don't want to get big bulky, I'd just like to tone".
🐬But toned muscle is just revealing muscles by reducing your body fat.
🌳Getting "shredded" or "toning up or whatever you call it is simpler than you think on a plant based diet.
🤝You just need the toad map to destination plant based gains.
